Roasting garlic scapes in the oven or on a grill can be one of the best early summer foods you’ve ever eaten. Here is one recipe but don’t be afraid to experiment!!
Roasted Garlic Scapes
Ingredients:
2-3 tablespoons of olive oil
1 large bunch of garlic scapes (about 1 pound or so)
1 tablespoon of butter
salt and pepper, to taste
Method:
Pre-heat grill or oven to 425 degrees F.
Trim or snap the woody bottom of the scapes as you would fresh asparagus. Trim any brown tips.
If cooking on an outdoor grill, heat a frying pan and add 2 tablespoons of olive oil and the scapes to the skillet and toss until coated. Sauté for 4-5 minutes or until they are slightly tender. If they look like they are drying out, add 1 more tablespoon of olive oil. Remove from heat, add butter, salt, and pepper, and toss.
If using a grill, place spears directly on the grill grate and grill for 7-10 minutes until slightly charred or brown.
If using an oven, you can skip the stove step and place the scapes directly into any roasting pan with the oil, butter, salt and pepper. Bake for 10-15 minutes until they start to brown.
Remove from grill/oven and eat hot or serve cold, with or without shaved cheese on top. Or try another topping — experiment!
